Ingredients
- 1.5 cups tomato sauce
- 4 boneless/skinless chicken breast
- 2/3 cup mozzarella (shredded)
- 1/4 cup breadcrumbs (italian/panko, whatever)
- 1 tbsp shredded Parmesan (grated is fine)
- 2 tbsp olive oil
Directions
- Preheat oven to 350*
- Line a 12×8 baking dish with tomato sauce
- Trim and thin chicken breasts and lay on the sauce
- In a bowl, mix cheeses, breadcrumbs and olive oil
- Sprinkle breading mixture evenly over chicken
- Bake at 350* for 30-35 minutes.
Notes
I usually double the breading and thin 2-3 whole chicken breasts (and use two pyrex baking sheets). That serves two people dinner and lunch. I serve it over linguine. The sauce isn’t an exact measure either, I just make sure the pan is covered.
